Growing up my dad always ate cherries! I didn't enjoy them or even remember trying them but now I couldn't imagine life without them. When most people think about cherries the sweet maraschino cherries are usually the first thing to come to mind. I'm here to tell you that during cherry season sweet red cherries are just as sweet and decadent.

Fresh cherries are one of my favorite fruits. One thing you'll always find in my farmers market haul is sweet cherries. This is my favorite time of year because they're in season and I know I won't have trouble finding them. The beautiful dark crimson red fruit is the perfect sweet bite, especially in the center of the buttery crust.

What is a Galette?

A galette is a French term to describe various types of flat round or free-form pie. There's a wide range of fillings but galette crust often has a rustic thrown together feel. You don't even need a pie dish!

It's the "Oh, I just threw this on" of desserts. The best part of a rustic galette is that it doesn't need to look perfect to taste delicious!

What type of cherry should I use for a galette?

You can use either fresh or frozen sweet cherries. If you want to use fresh cherries, I recommend using a cherry pitter as the process will be faster.

If you're looking for a tart kick, use sour cherries for a sour cherry galette. Not a cherry fan? Swap them out for your favorite fruit!

  • Pre-made pie crust.If you're a pie crust master, feel free to whip your own up but I'll stick to buying pre-made!
  • Fresh lemon juice.Using fresh lemon juice allows the flavors to pop while also balancing the sweetness.
  • Brown sugar. Brown sugar has a rich taste. I recommend only swapping it out for coconut sugar.
  • Cornstarch.Cornstarch can be swapped out for all-purpose flour or arrowroot powder.
  • Egg. Egg wash is used to brush the pastry dough to prevent it from burning but also allows it to turn golden brown. However, this is always optional.
  • Turbinado sugar. Or any other coarse sugar. White sugar will also work.

🔪Instructions

This rustic cherry galette couldn't be easier to make. Pitted cherries are mixed together with brown sugar, lemon juice, and cornstarch. Then the cherry filling is loosely wrapped in pie dough and baked to a golden brown.

Step 1: Add your filling ingredients to a large mixing bowl.

Step 2: Mix the filling ingredients to combine.

Step 3: On a prepared baking sheet lay out the pie crust and add the cherry filling to the center of the pie crust.

Step 4: Fold in the edges of the dough, brush with egg yolk and sprinkle with sugar. Bake for 25-30 minutes. Allow to cool and serve with your favorite vanilla ice cream.

How do I prevent soggy pie crust?

The cornstarch or flour in the filling mixture is essential for soaking up excess moisture from the fruit. This will allow the moisture to stay in the filling and not seep into the flaky pie crust.

What's the difference between a tart and a galette?

Though another elegant staple of French cuisine, a tart takes a little more skill and patience. A fruit galette is a rustic dessert that can be thrown together without the apprehension of perfection.

How long will a cherry galette stay fresh?

​If you store your cherry galette in an airtight container at room temperature it will stay fresh for 2-3 days. Store in the refrigerator for it to stay fresh for 4-5 days.

  • When baking with frozen fruit, don't thaw it ahead of time.
  • Allow the pie crust to come to room temperature before rolling it out to prevent tearing.
  • Place your galette on the lowest rack while cooking to prevent the pie crust from burning.
  • The most important thing to remember after cooking traditional pie, galettes, and other fruit-filled desserts is to allow them to cool before serving. When cooled it allows the fruit mixture to solidify so you don't have any runaway filling.
  • To reheat, place slices on plates and microwave for about 30 seconds until warm. You can also reheat in the oven at 350 degrees F for about 5-10 minutes.

  • 2 ½ cups frozen pitted cherries, cut in half
  • 1 tablespoon lemon juice
  • cup brown sugar
  • 2 tablespoons cornstarch
  • 1 egg yolk
  • 2 tablespoons granulated or turbinado sugar

Instructions

  • Allow the pie crust to come to room-temperature.

  • Preheat the oven to 325 degrees F.

  • In a large bowl, mix the cherries together with the lemon juice, brown sugar and cornstarch.

  • On a baking sheet lined with parchment paper, lay out the pie crust.

  • Add the filling to the center of the pie crust leaving 2-3 inches on the outside.

  • Gently fold the pie crust over the edges.
